- 2 pounds chicken wings, tips removed
- 2 tablespoons olive oil
- 1 finely chopped onion
- 3 cloves minced garlic
- 1 cup water
- 1/2 cup tomato paste
- 3 tablespoons red-wine vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons dark brown sugar
- 1/4 teaspoon black pepper
- 1 pinch cayenne pepper
Directions
Rinse the wings and pat dry.
Heat the oil in a saucepan over medium heat. Cook the onion and garlic, stirring, for 10 minutes or until soft. Add remaining ingredients. Simmer for 20 minutes. Let sauce cool. Toss the wings with sauce to coat. Cover; refrigerate 1 hour. Place the wings on a rack in a broiler pan. Bake at 450F. for 40 to 45 minutes, brushing occasionally with more sauce.
Can be grilled, by cooking the wings over a low flame with the lid closed, turning frequently to prevent burning.
