- 2 1/2 cups sugar
- 8 oz. cream cheese
- 1/2 cup margarine
- 4 eggs
- 1 16 oz. can pumpkin
- 3 1/2 cups flour
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp ground clove
Preheat oven to 350 degrees.
In large bowl, combine sugar, cream
cheese, and margarine. Using electric mixer, mix at medium
speed until well blended. Add eggs one at a time, mixing
well after each addition. Blend in pumpkin.
In another large bowl, combine flour,
baking powder, salt, cinnamon, and ground clove. Gradually
add to pumpkin mixture, stirring just until moistened.
Pour into greased and floured 9" x
5" loaf pans and bake 1 hour, or until wooden toothpick
inserted in center comes out clean.
Cool for 5 minutes. Remove from pans.
