Ingredients
- 1 1/4
cup whole bran cereal
- 1 cup
milk
- 1/4 cup
oil
- 1 egg,
beaten
- 1 1/4
cups flour
- 1/2 cup
sugar
- 1 Tbs
baking powder
- 1/2 tsp
salt
Filling:
- 8oz.
cream cheese
- 1/4 cup
sugar
- 1 egg,
beaten

Directions
In large bowl,
combine cereal and milk - let stand 2 minutes.
Add oil and egg. Mix well.
In medium
bowl, combine flour, sugar, baking powder, and
salt. Add to cereal mixture. Stir just until
moistened.
Spoon batter
evenly into greased and floured medium muffin
tin.
Filling:
Combine cream cheese, sugar, and egg. Stir until
well blended. Drop by rounded measuring
teaspoonfuls into muffin centers, pushing down
to cover with batter.
Bake at 375
for 25 minutes.
