- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 1 Tbs vanilla
- 2 cups peeled shredded
zucchini (about 1 medium)
- 2 1/2 cups all-purpose
flour
- 1/2 cup baking cocoa
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp baking powder
Directions
In large bowl beat eggs, oil,
sugar, and vanilla. Stir in zucchini.
Combine dry ingredients and
add to zucchini mixture - mix well.
Pour into two greased loaf
pans. Bake at 350 degrees for 1 hour or until bread
tests done.
Makes 2 loaves.
