- 1 1/2 cups all-purpose
flour
- 3/4 cups sugar
- 1 1/2 tsp. baking
powder
- 1/4 tsp. baking soda
- 1 tsp cinnamon
- 1/8 tsp salt
- 2 egg whites -
slightly beaten
- 1 1/2 cup shredded
zucchini
- 3 Tbs. cooking oil
- 1 tsp. finely shredded
lemon peel
- 1/4 cup chopped
walnuts
Directions
Preheat oven to 350 degrees.
In large mixing bowl, stir
together flour, baking powder, baking soda, salt, and
cinnamon.
In medium bowl, stir
together egg whites, zucchini, sugar, cooking oil, and lemon
peel. Add to the flour mixture, stirring just until
combined. Stir in walnuts.
Pour batter into greased
loaf pan.
Bake 50 minutes or until
wooden toothpick inserted in center comes out clean. |
