- 12 hard cooked eggs
- 1/4 cup mayo
- 2 T. vinegar
- 2 T. butter
softened
- 1 T. sugar
- 1/2 t. pepper
- 1/4 t. salt
- 1/2 cup frozen chopped spinach, thawed and
squeezed dry
- 4 bacon strips, cooked and crumbled.
- May add a touch of horseradish to spinach mixture for a bit up a kick.
Directions
Slice eggs in half lengthwise; remove yolks and set whites aside. In
a small bowl, mash yolks with fork.
Stir in mayo, vinegar, butter,
sugar, pepper and salt. Add spinach and mix well.
Stir in bacon;
spoon or use a pastry bag with a wide opening into egg whites. Chill. |
