Spinach Bacon Eggs

Ingredients

  • 12 hard cooked eggs
  • 1/4 cup mayo
  • 2 T. vinegar
  • 2 T. butter softened
  • 1 T. sugar
  • 1/2 t. pepper
  • 1/4 t. salt
  • 1/2 cup frozen chopped spinach, thawed and
    squeezed dry
  • 4 bacon strips, cooked and crumbled.
  • May add a touch of horseradish to spinach mixture for a bit up a kick.
Directions

Slice eggs in half lengthwise; remove yolks and set whites aside. In
a small bowl, mash yolks with fork. 

Stir in mayo, vinegar, butter,
sugar, pepper and salt. Add spinach and mix well. 

Stir in bacon;
spoon or use a pastry bag with a wide opening into egg whites. Chill.
