Ham, Mushroom, and Gruyere Crêpes

Ingredients
  • 1 lb. cremini mushrooms, sliced
  • 1/3 cup half-and-half or light cream
  • 1/4 cup water
  • 1/4 tsp. salt
  • 1/4 tsp. coarsely ground black pepper
  • 1 4.5 oz. package 7" French-style crepes
  • 8 thin slices baked ham or turkey ham
  • 6 oz. Gruyere or Swiss cheese, shredded

Directions

Preheat oven to 400 degrees.

Heat 12" non-stick skillet over medium heat until hot.  

Add mushrooms - cook 7 minutes or until browned and tender, stirring occasionally.  

Add half-and-half, water, salt, and pepper, and cook 1 minute longer, stirring.  

Transfer to small bowl.

Top 8 crepes, browned side down, with 1 slice ham, 2 Tbs. cheese, and 1/4 cup mushroom mixture.  

Roll and place in shallow broiling pan.  Sprinkle with remaining cheese and Bake 5 minutes or until hot and edges are lightly browned.

*For best results use fresh ingredients.
