Latkes

Ingredients

  • 3 cups peeled potato chucks
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon pepper
  • 2 egg whites
  • 1 small onion quartered
  • 1 tablespoon canola oil

 

Directions

Place first 7 ingredients in food processor until chopped very fine. 

Heat oil in non stick pan. 

Spoon batter by 1 tablespoons into skillet. 

Cook approximately 1 1/2 minutes per side until golden brown. 

Continue cooking rest of batter, keeping the latkes warm. 

Garnish with sour cream, green onions, apple sauce.
