Ingredients
- 2 cups flour
- 3 tsp baking powder
- 1 Tbs sugar
- 2 eggs
- 1 1/4 cups milk
- 2 Tbs melted butter or
shortening

Directions
Sift together flour, baking
powder, and sugar. Beat eggs and milk. Add flour mixture
and beat until it smooth. Stir in melted butter.
Pour mixture one spoonful at
a time onto hot griddle or pre-heated frying pan. There is no
need to add oil to the pan. Turn cakes only once.
Top with blueberries,
strawberries or maple syrup and butter.
Yield: 20 small pancakes
Add a dash of cinnamon
and/or vanilla for added flavor.
