- 2 medium potatoes
- 1 egg (beaten)
- 1/4 cup flour
- vegetable oil
Directions
Peel and coarsely grate the potatoes. I
use a food processor.
Soak potato for 5 minutes in very cold water,
drain.
Mix with the beaten egg and
flour.
Drop teaspoon size pancakes (larger
if you like) into hot vegetable oil.
Brown on both sides.
Serve with applesauce.
Makes 10-12 small latkes. |
