- 4 eggs
- 1/4 cup margarine
- 1/2 cup flour
- 1 cup sugar
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 2 cups whole milk
- 1/2 cup shredded
coconut
Note: For a
creamier custard, substitute light cream for 1 cup of the
milk. Butter may also be substituted for the
margarine. Directions
Preheat oven to 350 degrees.
Put all ingredients into
blender at once. Blend until mixed thoroughly.
Pour into 9" pie pan
and bake 50 minutes.
Note: If using
hand mixer, mix at medium-high speed until thoroughly mixed.
