Ingredients
- 9"
pastry shell
- 1/3 cup
flour
- 1/2 cup
sugar
- 2 cups
milk
- 3 small
egg yolks
- 1/2 tsp.
vanilla
- 1 Tbs.
firm butter
- 1 1/2
cups strawberries (preferably fresh
from an organic Vermont farm)

Directions
Bake and cool
shell, if required.
In
heavy saucepan, blend flour and sugar. Slowly
stir in milk. Cook and stir over medium heat
until mixture thickens.
Stir
1/2 cup of hot mixture into well-beaten egg
yolks. Pour back into saucepan, cook and stir 2
minutes more. Remove from heat.
Stir
in vanilla and butter. Pour half of mixture into
pie shell. Layer mixture with strawberries. Pour
remaining mixture on top. Cool and serve.
Yield:
6 to 8 servings.
