For Each Serving
- 1 slice bacon
- 1 filet mignon, cut about 2" thick
- Salt and freshly ground pepper to taste
Directions
Fry the bacon in a skillet over high heat until almost crisp.
Drain on paper towels and wrap around the side of the filet, attaching the ends with a toothpick.
Season the filet with salt and pepper and sauté in a little bacon grease until browned on both sides.
Transfer to a preheated 450°F oven and roast to an internal temperature of 125° F
for medium rare, about 8-10 minutes. Allow to rest at room temperature for 5 minutes before serving.
You can also transfer these to a preheated grill on medium heat to finish cooking.
