Ingredients
  • 1/3 cup finely chopped shallots or onions 
  • 2 tablespoons margarine or butter 
  • 2 cups chopped, cooked potatoes 
  • 2 cups finely diced beets ( if using canned, drain well) 
  • 1-1/2 cups finely chopped, cooked corned beef 
  • 1/4 teaspoon pepper 
  • 2 to 6 tablespoons milk 

Directions

In a large skillet cook shallots or onions in margarine or butter until tender. Stir in potatoes, beets, beef, and pepper. Spread evenly in skillet, stir in milk until moist. Amount will differ depending on the amount of moisture in the potatoes. Cook over medium heat for 8 to 10 minutes or until browned on bottom, turning occasionally.
