Sausage and Peppers

Ingredients

  • 22 pounds Italian sausage 
  • 2-3 TBS olive oil 
  • 2 sweet onions, cut into strips
  • 4 bell peppers cut into strips 
  • 3 cloves of garlic, chopped
  • 1/2 glass red wine
  • pepper and Basil/Italian Spices to taste
  • 1-2 cans Italian tomatoes

Directions

In a large, heavy frying or sauté pan, brown Italian sausages in 1 TBS olive oil -- remove and reserve. Add 1-2 more TBS olive oil, onions, pepper and garlic and sauté until soft, about 10 minutes. Add back Italian sausage, splash with red wine and reduce until almost gone. 

Add 1-2 cans of tomatoes and their juice, seasoning with Italian herbs as desired. Cover partially and reduce to a simmer, stirring occasionally until sausages are done and sauce is thick, about 10 minutes. 

Taste and adjust seasoning. If sauce is too thick, thin with water or red wine -- too thin, uncover and reduce.
