Southwestern Meatloaf

Ingredients

  • 1 1/2 lbs. ground beef
  • 3/4 cup crushed corn tortilla chips
  • 1 large egg
  • 1 15-1/2 oz. can whole kernel corn - drained
  • 1 11 oz. jar medium or hot chunky salsa
  • 1/2 tsp. salt
  • 1/4 tsp. coarsely ground black pepper

Directions

Preheat oven to 375 degrees.

In large bowl, mix together ground beef, tortilla chips, egg, corn, 1 cup salsa, salt, and pepper just until blended - do not over mix.

In small roasting pan, shape meatloaf into 10" by 5" loaf and top with remaining salsa.

Bake 1 hour or until internal temperature reaches 160 degrees.  Let stand 10 minutes before slicing.
