Mussels Marinara

Ingredients

  • 2 lbs Mussels
  • ¼ cup olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 1 tsp red pepper flakes
  • 1 small can chopped tomatoes
  • 1 tsp fresh oregano
  • salt to taste
  • ½ cup white wine
  • ½ cup chicken broth
  • 2 Tbsp fresh parsley, chopped
  • 1 Tbsp lemon juice
Directions

Heat oil in a large skillet. Cook onion and garlic 2-3 minutes.

Add red pepper, tomatoes, oregano and salt. Heat 2-3 mintues.

Add mussels and wine. Simmer for 2 mintues.

Add broth, parsley and lemon juice. Continue simmering for 2-3 mintues.

Serve immediately over your favorite pasta.
