Roasted Rosemary Salmon

Ingredients

  • 2 Salmon filets -5 ounces
  • 6 stalks Rosemary cut in 6" lengths
  • 1 large thickly sliced red onion
  • 1 lemon sliced
Directions

Preheat oven to 400 F.

Spray a baking sheet with olive oil spray, Place rosemary stalks in a single layer on the sheet, in an area large enough for the salmon filets to lay on. Next place a layer of the onions on the Rosemary top with the salmon filets, sprinkle with salt and pepper.

Cover the salmon with a layer of lemon slices and two or three more stalks of rosemary.

Place in oven until fish just begins to flake, internal temperature of 140 F.
