Shrimp With Orzo And Feta Cheese

Ingredients

  • 1 1/4 lbs. fresh medium-size shrimp in shells
  • 1 1/2 cups orzo
  • 1 Tbs. margarine or butter
  • 3 medium tomatoes, coarsely chopped
  • 4 oz. garlic and herb feta cheese, crumbled
  • 1/2 tsp. salt
  • 1/8 tsp. coarsely ground black pepper
Directions

Peel shrimp and make a shallow cut lengthwise down back of each - rinse under cold running water to remove vein.

Prepare orzo per package instructions - drain.

In 10" non-stick skillet, melt margarine over medium-high heat. Add shrimp, salt, and pepper. Cook 3-5 minutes stirring occasionally until shrimp turn opaque.  Add tomatoes - cook and stir 30 seconds.  Remove from heat.

Combine drained orzo, shrimp and feta cheese.  Toss and serve.
