Sausage Zucchini Boats

Ingredients

  • 4 medium zucchini (2 lbs.)
  • 1/4 lb bulk pork sausage
  • 1/4 cup chopped onion
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fine cracker crumbs
  • 1 egg, slightly beaten
  • 1/2 tsp. monosodium glutamate
  • 1/4 tsp. salt
  • 1/4 tsp. thyme
  • dash garlic salt
  • dash pepper
Directions

Preheat oven to 350 degrees.

Cook whole zucchini in boiling, salted water until barely tender (7-10 min.)  Cut in half lengthwise, scoop squash from shells, and mash.

Cook sausage and onion - drain.  Stir in mashed zucchini.  Reserve 2 Tbs. Parmesan cheese. Mix in remaining cheese and all ingredients.

Spoon into zucchini shells and place in shallow baking dish.  Sprinkle with reserve Parmesan cheese, dash with paprika.

Bake 25-30 minutes or until heated through.
