- 3-4 lbs chicken
- 1 medium onion, finely chopped
- 1-3 tbsp fresh grated ginger
- zest of 1 orange
- 3/4 cup fresh orange juice
- 1 cup fresh cranberries
- 1/2 cup sugar
Directions
Heat 2 inches of oil in a deep frying pan. Add chicken and brown on both sides. Add onion, ginger, orange zest and orange juice. Simmer covered for 20 minutes, turning the pieces about halfway through the cooking time. Add cranberries and sugar and simmer uncovered for 10 minutes. Serve over cooked rice.
