- 1 cup chicken
- 1/4 pound Linguini
- 1/2 cup broccoli
- 1/2 cup zucchini
- 1/2 cup red pepper
- 1/2 cup red onion
- 1/2 cup yellow squash
- 1/2 cup snow peas
- 3/4 cup cream
- 1 tablespoon butter
- 1 tablespoon olive oil
2 teaspoons Italian spices
- 2 teaspoons nutmeg
- 1 tablespoon pesto paste
- 1 tablespoon flour
- 1 tablespoon chopped garlic
- 1 tablespoon white wine
Salt & pepper
Directions
Cook linguini.
Sauté chicken in oil and chopped garlic until fully cooked. Remove and set aside.
Melt butter in skillet, add vegetables and sauté for 2 - 3 minutes.
Add Italian spices, nutmeg and pesto.
Sprinkle flour over vegetables.
Add cream.
Stir together and sauté for 1 minute.
Add white wine, salt & pepper and let simmer for a minute.
Pour vegetables and cream sauce over pasta.
Place chicken on top and serve.
