Ingredients
- 4 cups Navy, Pea or
Yellow-eyed beans
- 1 1/4 tsp baking soda
- 1 1/4 cups Vermont Maple
Syrup
- 3/4 cup sliced onion
- 2 1/2 tablespoons dry mustard
- 3/4 cup molasses or
brown sugar
- 1/4 cup tomato or chili
sauce
- 1/4 lb. salt pork or
smoked bacon

Directions
Preheat oven to 325 degrees.
Place beans and baking soda in
large pot. Cover with enough water to allow
beans to expand. Soak at least 8 hours, drain,
and add fresh water.
Bring to a boil, reduce heat,
and simmer until skins begin to flake when
touched (40 min). Drain.
Combine beans and remaining
ingredients in bean pot or deep dish casserole.
Add water to barely cover.
Bake 4 hours.
