- 2 lbs. sweet potatoes or yams, peeled and cubed
- 3 to 4 tablespoons Maple Syrup
- 3/4 cup Mayonnaise
- 1 medium Granny Smith apple, cut into 1/4-inch cubes
- 1/2 cup dried cranberries, raisins, or dried cherries
- (optional 1/4 cup chopped walnuts or pecans)
Directions
Preheat oven to 400°.
In medium bowl, toss potatoes with Maple Syrup. Spread potatoes on a baking sheet and bake, stirring once, 30 minutes until potatoes are tender; cool completely.
In large bowl, combine potatoes, apple, dried fruit, nuts if desired and remaining Mayonnaise; toss to coat. Chill before serving.
