2 lbs fresh chopped spinach,
(washed, and drained) or frozen chopped spinach
4 cups chicken or vegetable stock
1/8 tsp nutmeg
Salt and ground pepper to taste
1/2 to 3/4 cup heavy cream or half-and-half
Directions
Heat the butter in a large pot over medium heat and
sauté the onion
until light golden brown.
Add the spinach and stir until the spinach
is just tender, 3 to 5 minutes.
Transfer the spinach mixture and a
little of the stock to an electric food processor or blender and
process until smooth. Return the spinach mixture to the pot and add
the remaining stock.
