Spinach Soup

Ingredients

  • 4 Tbs butter
  • 1/4 cup finely chopped onion
  • 2 lbs fresh chopped spinach, (washed, and drained) or frozen chopped spinach
  • 4 cups chicken or vegetable stock
  • 1/8 tsp nutmeg
  • Salt and ground pepper to taste
  • 1/2 to 3/4 cup heavy cream or half-and-half
Directions

Heat the butter in a large pot over medium heat and sauté the onion
until light golden brown. 

Add the spinach and stir until the spinach
is just tender, 3 to 5 minutes. 

Transfer the spinach mixture and a little of the stock to an electric food processor or blender and
process until smooth. Return the spinach mixture to the pot and add the remaining stock. 

Season with nutmeg, salt, and pepper.
