Ingredients
- 3 medium zucchini
- 1 medium onion -
thinly sliced
- 1 Tbs. salad oil
- 1/2 to 1 tsp. crushed
oregano
- 8 oz. tomato sauce
- 8 oz. sliced
mozzarella cheese
- grated parmesan cheese
Directions
Cut zucchini in half
length-wise.
In large skillet, cook onion
in hot salad oil until tender, but not brown. Add
zucchini halves, cut side up. Sprinkle with salt,
pepper, and oregano. Top with tomato sauce and sprinkle
with parmesan cheese. Cover and cook just until tender,
about 10 minutes.
Top zucchini with mozzarella
cheese slices, and sprinkle with parmesan cheese. Heat
until cheese begins to melt, and serve immediately.
